Shortbread Cookies with Raspberry Jam Glaze
Ingredients:
2 sticks unsalted butter, softened
¾ cup powdered sugar
2 cups gluten-free flour (I used Bob′s Red Mill), sifted
¼ teaspoon xantham gum
¼ teaspoon salt
1 teaspoon pure vanilla extract (make sure it is gluten free)
One 10-ounce jar of your favorite jam. Red current or raspberry are my favorite because of their gorgeous ruby color (again, make sure it is gluten free).
Preparation:
1. Preheat oven to 350 degrees.
2. Using a mixer (use the paddle attachment) cream the softened butter.
3. Add powdered sugar until creamy.
4. Sift xantham gum, gluten-free flour and salt together.
5. Add flour mixture to the creamed sugar (be sure to not over mix).
6. Add vanilla. mix until dough comes together (don’t worry the vanilla will help the dough come together).
7. Place dough on a cleaned surface.
8. Gently knead the dough into a ball and then roll into a long tube. (The longer you make the tube the smaller the cookie will be. I made my tube about a foot and a half.)
9. Wrap with plastic wrap and place in freezer for 20 minutes. Above is my shortbread roll. You can make a neat or not-so-neat roll. It will always come out tasty!
10. Cut the dough into ¼-inch thick slices.
11. Place on a greased baking sheet with a bit of room. (I grease my pans by using the papers from the butter.)
12. Cook for 10-15 minutes (until lightly golden around the edges).
13. Meanwhile, place the jam in a small pot and bring to a boil. You will want to reduce it a bit until it is a thick syrupy texture.
14. Place cookies onto a rack to cool (they can be crumbly so be careful).
15. Spoon jam glaze onto cookies while hot. A teaspoon per cookie should suffice.
16. Let cool for about an hour.
17. Enjoy!
