It’s been quite a journey. It’s hard to believe it’s already been seven years since my son Isaiah, now 17, was first diagnosed with gluten intolerance and dairy intolerance. I remember his words when the doctor gave him the news as if it were yesterday. “Mommy, what am I going to eat?” Honestly, those words still echo in my mind. The fear we both shared in not knowing what was going to happen next.
Well, we’ve come along way. Isaiah has just started applying to colleges (I’m still trying to digest that reality) and what was his essay about? It’s a coming-of-age story of a young boy who’s world changes upside down when he’s first diagnosed with gluten and dairy intolerance. Then, he sees the world in a whole new light and his perspective on life transforms into a place full of opportunity—and community. Needless to say, I cried reading every sentence. I was overwhelmed by his gifted poetic nature of writing and even more so, by his grace.

Gluten-Free, Dairy-Free Multi-Purpose Flour
This is my tried-and-true recipe that I’ve been making ever since I developed it just three months after Isaiah’s diagnosis. It’s been my 100% successful, cup-for-cup substitute for regular flour. Over the past seven years, I’ve tried to improve upon it, but it simply didn’t need any. I’ve also tested and tasted many other flours on the market and there was a real difference in flavor, performance and quality. Gluten-Free, Dairy-Free Pancake, Waffle & Biscuit Mix
Isaiah has already declared his plans to open up the first-ever gluten-free IHOP (International House of Pancakes). This mix is the reason why. I modeled the recipe after one of his favorite pancake mixes he enjoyed before he was diagnosed: Original Bisquick. Gluten-Free, Dairy-Free Bread, Pizza & Cinnamon Roll Mix
After seven years of testing, I finally made a loaf of bread that we wanted to eat. Every. Day. I can remember the afternoon Isaiah walked in the kitchen after school one day, his backpack still slung on his shoulder. He spotted a loaf of bread on the kitchen counter—a pretty normal sight in our house. He did the usual: He picked up the loaf, then plopped it down on the counter. Much to his—and my—surprise, this time was different. His face lit up and with a huge smile on his face, he asked if he could slice into it. Reluctantly, I said okay, then walked over to him to see what we had never seen before—a light and airy sandwich bread. It was unreal.
