Originally from the town of Rimini on Italy’s Adriatic coast, I’ve known Antonella since 2012, when I tasted her popular gluten-free Olive Oil Focaccia at Smorgasburg, an open-air market serving local, hand-crafted foods.
You may call these old school treats rainbow cookies (like me) or Italian flag cookies, Napoleon cookies, seven-layer cookies, seven-layer cake, tri-color cookies or even Venetian cookies. Either way, these cookies are a revelation and were first made popular in the late 1800s and early 1900s by Italian-American bakeries in New York City. They speak to nostalgia, handcrafted baking and of basic ingredients that transform into an emotional food memory we crave every holiday season.
