My introduction to the dairy-free and gluten-free community—as many of you who have shared this journey with my family already know—was not only sudden, but it changed everything I thought I knew about cooking and baking.
As a former bakery owner and food magazine editor—besides my kids—food was my entire life.
When Isaiah was diagnosed with gluten and dairy intolerances at age 10—now 13 years ago when no one even knew what “gluten” was—it was like living on a deserted island with no rescue in sight. That’s when I decided to start from scratch and be the change I wanted to see in the food world.
I failed time after time—until the day I didn’t.
Once I had cracked the code on how to recreate textures and flavors that were the same or better than the original, I knew I could help other families reclaim their favorite foods. Now, I want to share everything I’ve learned about meal prep.
Even with all my experience, as a single mom raising two kids, I struggled to cook meals for my family. Having worked in commercial kitchens, I know that any prep is better than no prep, so I started doing meal prep at home. Doing meal prep not only ended my mealtime struggle, it also saved me precious time and money.
Deciding what meals to prep and in which order isn’t exactly intuitive and I want to show you how easy it can be to plan, cook, bake and eat dairy-free and gluten-free.
